Francesco joins the team at S. Egidio after 20+ years of owning his own pizzeria and restaurant in the southern region of Puglia, Italia. He is trained in the Neapolitan tradition of pizza making, but his mastery of the Italian culinary tradition stretches far beyond the perfection of his highly sought after dough.  Under Franco's leadership in the kitchen, S. Egidio is introducing NJ to an authentic Italian culinary experience, bursting with fresh flavors and sweet aromas reminiscent of the many small  villages throughout the Italian countryside from which many of our ingredients are sourced.
